My Simple Tomato Sauce
A very simple and basic tomato sauce
Equipment
- 1 2 Quart Sauce Pot
Ingredients
- 1/4 Cup olive oil
- 1 Medium onion, minced
- 2 Cloves garlic, minced
- 40 Ounces crushed tomatoes
- 1 Tsp dried oregano
- 1 tsp dried Basil
- 1 Tbsp Sundried tomatoes (Optional) In oil or from dried, soaked for 30 minutes in warm water
- 1 pinch red chili flakes
- Salt and Pepper to taste
Instructions
- warm olive oil
- add onions and saute briefly for about 2 minutes or until tender and translucent
- add garlic and stir, allow to saute for about a minute
- add Sundried tomatoes or alternatlivey a 1/2 Tsp paste and allow to cook for about a minute
- add herbs and tomatoes, simmer for about 20 minutes
- season to taste and blend until smooth
Notes
San Marzano tomatoes are ideal because they have small seed pockets and are meatier which yields a smoother velvety sauce.
If the sauce is a bit too acidic a pinch of baking soda can help mellow it.
