Lohikeitto (Finnish Salmon Soup)
A delicate but hearty fish stew from Finland
Equipment
- 2 Quart Sauce Pot
Ingredients
- 1 TBSP Nuetral Oil
- 5 Oz Salmon Fillet tail pieces and belly scraps work well.
- 2 Tbsp Butter
- 1 Cup Leeks, Chopped
- 1.5 Tbsp Flour
- 2 Cup Fish Broth or Stock
- 1 Cup Carrots, chopped
- 2 Cup Potatoes, Cubed
- 1 Cup Heavy Cream
- 2 Tbsp Fresh Dill, miced
- Ssalt and Pepper to taste
Instructions
- Heat oil on medium heat. Gently brown salmon fillets till golden. Remove and reserve.
- Add in butter and allow to melt. Add leeks and saute until nice and soft. Add flour and stir to combine.
- Add fish stock. Allow to simmer and thicken slightly.
- Add potatoes and carrots. Simmer about 10 minutes till tender.
- Stir in Heavy cream. Allow to simmer about 10 more minutes. Add in salmon in chunks.
- Finsih with fresh dill gently folded in. Adjust seasoning to taste. Enjoy.
