- 1 TBSP Nuetral Oil
- 5 Oz Salmon Fillet tail pieces and belly scraps work well.
- 2 Tbsp Butter
- 1 Cup Leeks, Chopped
- 1.5 Tbsp Flour
- 2 Cup Fish Broth or Stock
- 1 Cup Carrots, chopped
- 2 Cup Potatoes, Cubed
- 1 Cup Heavy Cream
- 2 Tbsp Fresh Dill, miced
- Ssalt and Pepper to taste
Heat oil on medium heat. Gently brown salmon fillets till golden. Remove and reserve.
Add in butter and allow to melt. Add leeks and saute until nice and soft. Add flour and stir to combine.
Add fish stock. Allow to simmer and thicken slightly.
Add potatoes and carrots. Simmer about 10 minutes till tender.
Stir in Heavy cream. Allow to simmer about 10 more minutes. Add in salmon in chunks.
Finsih with fresh dill gently folded in. Adjust seasoning to taste. Enjoy.
