Equipment

  • 2 Quart Sauce Pot

Ingredients

  • 1 TBSP Nuetral Oil
  • 5 Oz Salmon Fillet tail pieces and belly scraps work well.
  • 2 Tbsp Butter
  • 1 Cup Leeks, Chopped
  • 1.5 Tbsp Flour
  • 2 Cup Fish Broth or Stock
  • 1 Cup Carrots, chopped
  • 2 Cup Potatoes, Cubed
  • 1 Cup Heavy Cream
  • 2 Tbsp Fresh Dill, miced
  • Ssalt and Pepper to taste

Instructions

  • Heat oil on medium heat. Gently brown salmon fillets till golden. Remove and reserve.
  • Add in butter and allow to melt. Add leeks and saute until nice and soft. Add flour and stir to combine.
  • Add fish stock. Allow to simmer and thicken slightly.
  • Add potatoes and carrots. Simmer about 10 minutes till tender.
  • Stir in Heavy cream. Allow to simmer about 10 more minutes. Add in salmon in chunks.
  • Finsih with fresh dill gently folded in. Adjust seasoning to taste. Enjoy.
